3 Ingredient Turmeric Quinoa

Ok it’s the middle of February and you are starting to get sick of this whole “healthy” lifestyle you decided to embark on at the beginning of the year. Or, like everyone else, you gave up on it about a week in to the new year and you’ve been eating frozen pizzas because who cares about salad and this avocado trend? Right?  Well, today I’m going to give you a healthy recipes that doesn’t contain the sacred avocado and will have you wishing you’ve been eating this instead of those freezer burnt pizzas. This is my simple recipe for turmeric quinoa.

What is quinoa? Quinoa is a grain that contains every amino acid and is filled with protein. Quinoa is rich in fiber, iron, and magnesium  which are all necessary for maintaining a healthy diet. Plus, it’s gluten free!

What is Turmeric? Ground turmeric is a healthy spice that promotes anti-inflammation,  can help fight depression, and is even a natural liver detoxifier. Not only does turmeric have these amazing health benefits (along with hundreds more) but it is also a fun way to spice up a simple meal.

Turmeric Quinoa

Ingredients:

Instructions

  1. In a medium saucepan, add 2 cups of water and 1 cup of the uncooked quinoa
  2. Bring to a simmer and let sit for about 15 minutes, until the quinoa has absorbed all the water and is light and fluffy.
  3. Once cooked, allow quinoa to cool until it’s warm to touch, then add 1 teaspoon turmeric powder and the lemon juice.
  4. Stir until the turmeric powder and lemon juice have combined with the quinoa
  5. Serve quinoa as desired* and store any left over’s in the fridge for 3-4 days or freezer for 2-3 months.

* You can enjoy this turmeric quinoa as a side dish, a simple snack, or as a meal like I do. For a meal, I enjoy serving my turmeric quinoa as a stir fry. I add the quinoa, grilled chicken, fresh pineapple, and organic mixed vegetables together in a bowl and enjoy.
